Serving: for 2 persons

Ingredients:

  • Egg x 3
  • Broiled Unagi x 70g
  • Carrot 1/3 x 50g
  • French Beans x 2(10g)
  • Salad Oil x 2 teaspoons
  • Sesame Oil, as needed for frying omelette
  • A) Sugar x 1 teaspoon + Salt x 1/3 teaspoon
 

Directions:
1. Cut Unagi, Carrot and French Beans into small pieces.
2. Heat 20cm diameter frying pan and stir-fry Carrot and French Beans in the salad oil.
3. When vegetables are tender, add Unagi. Place on plate to cool.
4. Mix the eggs.
5. Add A) and cooked vegetables and Unagi.
6. Heat egg roll frying pan (square frying pan) with a dash of sesame oil over medium heat.
7. Pour in 1/3 amount of egg mixture and fold inwards gradually when the sides are firm.
8. Push egg to end of pan. Repeat with another 1/3 of mixture and a little sesame oil.
9. Repeat the procedures and cook the eggs till they are golden brown on the surface.
